Tri-Cities restaurant food park nears completion + Coffee shop opens with 5 days of deals

The intersection of Canal Drive and Kellogg Street is fast becoming one of the best places to grab something fast and unique to eat in the Tri-Cities.

Summer’s Food Truck Hub opened last month, bringing another permanent food truck park to the Tri-Cities, and its future neighbor is making fast progress.

1derful Food Park is just up the parking lot from Summer’s Hub, between McDonald’s and Sportsman’s Warehouse by the Colonade Shopping Center.

Owner Joo Seok Baek will operate 1Derful Korean BBQ out of the Food Park, and has space available for six other dining options, when the park opens this fall.

He plans to offer Korean BBQ fried chicken and meat and rice bowls.

The food park will feature seven walk-up restaurants where you order at the window and a large interconnected patio area, totaling about 30,000 square feet.

No opening date is set yet, but the building looks to be nearly complete. The big question is whether they’ll be able to get in commercial kitchen appliances in time because those have been slowed by supply chain issues.

With Brady’s Brats and Burgers and the food trucks at Summer’s Hub, that brings that area up to more than a dozen unique dining options, in addition to McDonald’s and Chuck E. Cheese in the immediate area.

Coffee shop

A new coffee shop is opening in Pasco, and they’re partnering with some of the Tri-Cities’ favorite places for food.

Swigg Coffee Bar is opening next weekend with five days of deals, starting with large drinks for just $2 on Oct. 21.

And if you come hungry, you’re in luck. In addition to locally sourced, small batch coffee, they’re partnering with El Fat Cat Grill of Kennewick and TSP Bakery of West Richland for food.

El Fat Cat was named the best place to get a taco in the Tri-Cities this month by Herald readers.

Swigg Coffee Bar is at the corner of Road 100 and Chapel Hill Boulevard at 4845 Broadmoor Blvd., Building 5.

The Pasco location is the first of many planned for Tri-Cities, according to a release from the company.

New seafood restaurant

A new restaurant is coming to Kennewick.

Los Potrillos Seafood Bar is taking over the old Kennewick Avenue MyFroyo location.

They have applied for a liquor license, and recently passed a fire safety inspection.

Owner Federico Cervantes said they plan to specialize in Mexican seafood and good drinks. They’re hoping to open later this year, pending approval for their restaurant licenses.

Los Potrillos will be at 2500 W. Kennewick Ave.
