Grab your meals and go during busy summer weekend from these Tri-Cities food trucks — then find some shade to eat.

Plenty of Tri-Cities food trucks offer mouth-watering meals so you don’t have to mess with cooking at home.

Picante Mexican Taqueria

Picante Mexican Taqueria at 419 Columbia Drive in Kennewick has you covered for quick bite for brunch, as well as lunch and dinner.

Picante owner Daisy Vargas opened the truck in January and cooks with family recipes passed down through generations from Manzanillo, Colima, in Mexico.

Get a hearty breakfast taco or a hefty breakfast burrito. Later in the day take advantage of birria (goat) tacos. Keto diet eaters can enjoy the flavors with a keto taco made from cheese tortillas and filled with soy adobada.

Picante also serves tortas (sandwiches), burritos, and quesadillas with additional meat choices such as asada (beef), adobada (pork), chicken and puerco enchilado (spicy pork).

Ninja Bistro

Ninja Fusion at Columbia Garden Wine & Artisan Village in Kennewick offers the unexpected.

Opened by Pasco High grad David Phongsa in 2018, Ninja Bistro features dishes with an Asian fusion flair.

Regulars on the menu include Spam musubi — a popular snack in Hawaii — as well as Kimchi quesadillas, Hawaiian Sliders, Island Tacos and fried potstickers.

The eateries signature slaw is a dominant ingredient in several of their dishes.

Pick a protein from shoyu chicken, braised beef, kalua pork and fried tofu.

Be sure to ask about Ninja Bistro’s secret menu, which recently featured a yakisoba burrito highlighted on Ninja Bistro’s Facebook page.

Bayu Some Cajun

Anthony Federico brings a deep tradition of New Orleans food to Bayu Some Cajun that opened in March.

Frederico builds on a rich family history of cooking up Southern food in restaurants of the same name dating to the early 1900s.

Grab and go with shrimp and grits, gumbo, crawfish and shrimp Etouffee, shrimp tacos and a po’boy sandwich offered in four different styles.

Specials rotate with catfish tacos and a spicy Louisiana burger being the most recent dishes.

Beignets — a deep fried pastry dusted with powdered sugar — is a tasty sweet treat that should be added for dessert.

Bayou Some Cajun is open 11 a.m. to 7 pm. Tuesday through Saturday at 1321 N. Columbia Center Blvd., in Kennewick.

The truck is anchored in front of Barnes & Noble at the mall, but floats.

Havana Cafe

Havana Cafe food truck at 1335 Lee Blvd., in Richland is an offshoot of Pasco’s Havana Cafe restaurant at 404 W. Lewis St. in Pasco.

Owner Leo Morales, who grew up in Havana, Cuba, brings his childhood to diners by serving up custom Cuban sandwiches, fried plantains and yuca (cassava).

Other choices include Cuban rice and black beans, yellow rice, red or black beans and Cuban breads.
