Washington has one of the best new restaurants — and it’s a speakeasy, Bon Appetit says
A Washington speakeasy landed a spot on Bon Appetit’s annual best new restaurants list.
Phocific Standard Time in Seattle, a name with a clever nod to the West Coast time zone, was among “Bon Appetit’s 50 Best New Restaurants 2022.”
The list was released on Sept. 8.
The Vietnamese cocktail bar is nestled within a local Pho chain restaurant called Pho Bac, which has four restaurants across Seattle.
Sisters Yenvy and Quynh Pham own the bar and the pho franchise, according to Eater.
“The restaurant, Pho Bac, might be closed for the night, but above the small Seattle franchise’s downtown location, a party is in full swing,” Bon Appetit wrote.
The bar serves 12 cocktails made with Vietnamese ingredients.
Bon Appetit recognized the ca phe trung cocktail — “a take on egg yolk coffee spiked with aquavit.”
The drink is made with brennivin aquavit, viet coffee and chartreuse egg yolk custard.
And the bar also serves Vietnamese snacks, including tapioca dumplings, bahn mi and crab dip.
Phocific Standard Time opened in October 2021.
