WSU Extension Q&A: Is it OK to freeze spices?
Q. I have had some of my spices for several years. How can I keep them fresh? Would it be OK to freeze them?
A. It is not recommended to refrigerate or freeze seasonings. The cold temperature might actually accelerate the deterioration of the seasoning. There are two exceptions to this rule. Red-colored spices, such as chili powder, cayenne pepper and paprika, can be refrigerated to prevent loss of color and flavor. Oil-rich seeds, such as poppy and sesame, can be stored in the refrigerator or freezer to prevent them from getting rancid. Consider buying spices from the bulk food section, so you can get them in the smaller quantity that you need.
Q. Last year, some of the grapes on my vines looked like raisins. What happened?
A. Grapes can shrivel for many reasons, like dehydration, sunburn and bunch-stem necrosis. If your berries are still sweet but just shriveled, then it is likely from dehydration or sunburn. For more information, go to http://bit.ly/shriveled_grapes.
Q. What is our status of snow pack and water for irrigation next year?
A. In general, as of March 1, the SNOTEL snow pack is almost normal (100 percent) for most of Washington. The snow water equivalent (SWE) percent of normal was 96 percent in the upper Yakima, 93 percent in lower Columbia, 99 percent lower Yakima and 97 percent for lower Snake.
Two areas that were higher SWE than average include central Columbia at 144 percent and uppper Columbia at 119 percent. Two areas were lower SWE than normal include central Puget Sound at 88 percent and Spokane at 87 percent. Forecasts for the April-September runoff period are within the normal range. Q. How do you get a 4-H group organized?
A. Have a meeting with young people who are interested and the adults who are willing to help. Publicize it through the school or a place where young people and their parents can be reached.
