Los Costeños: Family-run taco truck in Chehalis celebrating 15 years in business

If you're in the Twin Cities, among the many Hispanic eateries available is the Los Costeños taco truck, which aside from a wide variety of delicious tacos also serves up burritos, quesadillas, tortas, enchiladas, tamales and more.

Owned by Jesus Cebrero Sr., the taco truck first opened at the old Yard Birds Shopping Center in 2011, and is now celebrating its 15th year in business according to Cebrero Sr.'s son, Jesus Cebrero Jr., who The Chronicle spoke to on Friday, April 24.

Cebrero Jr. has been working at the business for 10 years and now helps his dad manage Los Costeños' two locations now.

After Yard Birds closed in 2022, Los Costeños was moved to its current location at 1570 N. National Ave. In 2024, the Cebrero family opened up a second Los Costeños location next to the Thunder 2 cannabis dispensary in Rochester.

Cebrero Sr. was running the Rochester location Friday.

As for the food they cook up, it's all based on old family recipes from their grandmother, who came from Alcapulco, on Mexico's Pacific Coast.

The business' name, Los Costeños, is an ode to their heritage, as the term translates roughly to "the coastal people" or "the coastal dwellers."

"All the recipes are grandma's recipes that we've kind of mastered. It's never the same as grandma's cooking though," Cebrero Jr. said jokingly.

Though kitchen work is not the easiest, he still enjoys it, as he gets to work with his family.

Aside from tacos and other tortilla-based dishes, Los Costeños offers a wide variety of meat options ranging from popular taco truck staples like carne and pollo asada to lengua and tripa.

All salsas and guacamole are made in-house as well.

As for celebrating their 15th anniversary, Cebrero Jr. stated some new specials are in the works on top of other surprises.

"Maybe some free tacos too," he added.

Los Costeños is open from 11 a.m. to 7 p.m. Tuesday through Saturday.
