Newest Tri-Cities pizza joint fuses flavors of India with classic pies
Sifithu Pizza & Bar brings a new-to-the-Tri-Cities twist on classic pizza by fusing the Italian staple with the flavors of India.
Partners Jatinder Singh, Karan Sandhu and Bhuphinder Singh opened the first Sifithu in West Richland earlier this month and will open a second, larger eatery in Kennewick in March.
The West Richland spot is in a small restaurant space at 1400 Bombing Range Road, opposite Yoke’s Fresh Market.
The space hugs a gas station and convenience store that hosted a series of Mexican restaurants before falling vacant.
The Sifithu team stepped in, seeing opportunity to introduce their ideas about fresh-made pizza with Indian flavors to the public.
Sandhu and the Singhs take their pizza seriously and emphasize they are local and independent and generous with what they put on top of their pies.
“We don’t hold back,” said Sandhu. “We put on extra toppings.”
The mozzarella is made from whole milk and ingredients are fresh.
Sifithu sells $5 slices of pepperoni and cheese pizza to go and bakes the rest from scratch.
The menu emphasizes classics such as pepperoni, cheese, sausage and vegetarian options.
Its signature, however, is classic, Punjabi-style Indian flavors. It offers an achari paneer pizza, butter chicken, chicken tikka masala, paneer tikka masala and others.
Jatinder Singh, “Jay” to his friends, brings the food background to Sifithu and serves as its face. He’s the person most customers will find behind the counter. He immigrated to the U.S. from India and has spent his working life in restaurants and kitchens.
He managed the Grizzly Bar at Pasco’s Red Lion Hotel for seven years. He specifically left to make the new venture his full-time job.
Sandhu is a real estate agent by day and brings the marketing flair to the business. Bhuphinder Singh rounds out the team.
Together, they say, they bring the right mix of skills to the entrepreneurial venture.
Singh would have preferred a more traditional American name for their restaurant. His partners convinced him that something unusual would help make the business more memorable, akin to the Pagliacci Pizza chain in the Seattle area.
“Sifithu” is an affectionate reference to his young daughter.
The debut location in West Richland is modest, but packed with potential, they say.
Sandhu’s father owns the property. When the latest Mexican eatery vacated the space next to the convenience store, the team decided to strike out.
They renovated the kitchen and small sit-down area. The former drive-thru lane that wraps behind the building is closed off and is being converted into a sheltered outdoor dining spot when weather is more conducive. They’ve putting in seating, a fire pit and physical barriers to separate it from nearby parking.
Sifithu has a beer and wine license. It sells pizza by the slice and takes custom orders for dining in, picking up or delivery via Door Dash. It offers eight-inch personal pizzas, a nod to the lunch crowd.
2nd location in Kennewick
The second Sifithu is expected to open in early March in Kennewick.
The team leased commercial space at The Falls, a new development from Elite Construction and Development that contains a mix of apartments and commercial space at 4112 W. 24th Ave. in Kennewick.
The Sifithu team said they loved the built-in customer base and the family-friendly nature of the complex, which includes an outdoor plaza and other restaurants in the area, including the future home of Cafe Magnolia.
Business hours in West Richland are 11 a.m.-9 p.m. Monday-Saturday and noon-8 p.m.. Sunday.
