Several new food trucks will join Pasco’s Food Truck Friday event through the rest of the summer.
Coffee, pizza, hot dogs and cupcakes are among the menu additions at the event in the farmers market area at Fourth Avenue and Columbia Street, according to a news release. They’ll join veteran trucks offering creole, fish fry and other items.
Food Truck Friday, orchestrated by Pasco Specialty Kitchen, the Downtown Pasco Development Authority and Pasco Farmer’s Market, was extended through August 28 about a month ago. It started as a pilot program with the trucks gathering at the farmers market area and offering their wares from 11 a.m. to 2 p.m.
The event has exploded, organizers said, and there was talk of having a dinnertime event to match or an additional day. But a shortage of food trucks not already committed elsewhere combined with demand for more options led organizers to focus on adding to the Friday lunch offering.
Among the new trucks joining the weekly event:
• Latte Lovin’: artisan coffee and iced café drinks
• Stick & Stone Pizza: Neapolitan wood-fired pizza from a Richland-based pizzeria
• D&Bs Pig Out Shack: hot dog shop with two menu items, the Hound Dog and the Mad Dog
• Frost Me Sweet: The Richland-based bakery will offer its signature cupcakes
Veteran food trucks that will be at Food Truck Friday through the rest of the summer include Ann’s Best Creole, Backyard Grub, Fresh Out the Box and Uncle Brothers Fish Fry.
Organizers have changed Food Truck Friday up a bit, with vendors now asked to commit to regularly appear. There will be one Friday this summer when the food trucks will be absent, though — July 24, during the Tri-Cities Water Follies.
