VEGETABLE SIDE WEEK: JOE'S GINGERED CARROTS

Sometimes it's a struggle to come up with a suitable vegetable side dish that doesn't come from a can. This week, we'll give you ideas on how to turn fresh veggies into delicious sides. This one is as simple as it is tasty.

INGREDIENTS

2 cups baby carrots

1 teaspoon ginger, ground or freshly grated

1 tablespoon butter

DIRECTIONS

Drop carrots into a pot of boiling, salted water. Cook for two minutes, drain and then submerge carrots in an ice bath to stop the cooking process.

Melt butter in a saute pan and add ginger. Remove carrots from the ice bath and re-warm them in the butter/ginger mixture, stirring until they're coated. Sprinkle with salt and serve.
