2 cups baby carrots
1 teaspoon ginger, ground or freshly grated
1 tablespoon butter
Drop carrots into a pot of boiling, salted water. Cook for two minutes, drain and then submerge carrots in an ice bath to stop the cooking process.
Melt butter in a saute pan and add ginger. Remove carrots from the ice bath and re-warm them in the butter/ginger mixture, stirring until they're coated. Sprinkle with salt and serve.
