1/2 seedless watermelon, cubed
8-12 ounces crumbled feta cheese
1/2-1 thinly sliced red onion
2 cups arugula
Salt, to taste
Fresh ground pepper, to taste
Extra-virgin olive oil, as needed
Cube peeled watermelon into ice cube size pieces. Add feta and onion and toss. Just before serving, add arugula, salt, plenty of pepper and a small amount of olive oil to toss. Serve chilled.
Makes 6-8 servings.
