Two new Tri-City restaurants will be opening their doors to the public Monday, offering up wood-fired pizza and Mexican staples.
The Rock Wood Fired Kitchen, new to the Tri-Cities, will open in Kennewick's Southridge area. Costa Vida Fresh Mexican Grill is adding a second Richland location at 3015 Duportail St.
The Rock's grand opening ceremony will start at 11:30 a.m. Monday.
The Rock Wood Fired Kitchen features rock history memorabilia and an overall warm "classic rock atmosphere," said Brad Loucks, who owns and operates the restaurant, in a news release.
The pizza chain is based in Sumner and has 11 franchises in Washington, all on the West Side, two in Oregon, three in Colorado and two in Alberta, Canada.
The casual family restaurant serves pizza, pasta, burgers and sandwiches, along with privately labeled micro-brews.
The Kennewick City Council approved the real estate purchase and sale agreement for the 1.26 acres at the corner of Highway 395 and Hildebrand Road last year.
"The city is excited for the opening of this new restaurant that complements the city's investment and vision for the Southridge area," said Kennewick Mayor Steve Young in a statement. "It is an example of the amazing growth in our community and another result of the city of Kennewick's continued efforts and focus on economic development and job creation."
The restaurant's is at 4862 W. Hildebrand Blvd.
Costa Vida plans to celebrate its opening at 3015 Duportail St. with giveaways for some of the first customers to line up in front of the new restaurant's doors.
Those first customer incentives are similar to what Costa Vida offered when it opened its first Richland location at 95 Gage Blvd. in November. About 40 people camped out over night in anticipation of free meals.
The first 25 guests in line at Costa Vida will receive a platinum punch card good for one free entree per week for a year.
The second 25 guests will receive a gold punch card, giving them a free meal once a month for a year. There is a possibility of additional gifts throughout the day.
The restaurant is the fifth Costa Vida franchise for Russ and Bob Cazier, who also own locations in Kennewick, Richland and Spokane.
Joy Cazier, vice president of operations for the new Richland Costa Vida, said in a statement, "Our store's fun, light-hearted atmosphere and made-to-order food offers something for everyone to enjoy. We know the Queensgate area will embrace our new addition to the community."
The menu features made-to-order burritos, tacos, enchiladas, quesadillas, salads and nachos.
The restaurant's menu is gluten free except for the flour and wheat tortillas and tres leches and key lime pie desserts.
The Queensgate Costa Vida at Kennedy Plaza in Richland will be open from 11 a.m. to 10 p.m. Monday through Thursday and from 11 a.m. to 11 p.m. Friday and Saturday. The restaurant can be reached at 509-783-0543.
