Have grill, will travel is Pasco chef Antoine Butcher's motto and new business.
He and his wife, Melanie, have started The Butchers' Grill, a catering business with a focus on grilled, smoked and slow-cooked meats.
But he doesn't limit his recipe box to the grill. His catering menu -- check it out at thebutchersgrill.net -- also includes gumbo, lasagna and a Philly-style sandwich.
"I don't specialize in a particular cuisine or type of cooking. I do foods I really like, what I'm especially good at cooking, but I'll change my menu to make anything anybody wants. If I don't have a recipe, I'll find one," he said, adding that everything he makes is from scratch, even his meat rubs.

One thing the 37-year-old chef won't be doing is baking.
"I'm not much of a baker," he admitted.
Butcher prefers to do much of his cooking on site.
"It's fresher, and those wonderful smells coming off the grill makes everyone hungry," he said.
He has a trailer with a 12-foot grill for large events. For small gatherings like family parties, he uses a Weber or his gas grill.
"Which I use -- gas or charcoal -- depends on the food. But I do prefer cooking on the open flame, with charcoal, and smoking," Butcher said.
Butcher's first restaurant job was in 1993 at TC Benders, a Tri-City steakhouse that closed years ago. He then worked at different restaurants, including 10 years at five different Outback Steakhouse restaurants, where he gained much of his culinary training.
"Two were in Las Vegas and Portland, some of the busiest Outbacks there are," he said.
Butcher said he has found cooking to be so much fun and such a creative outlet that last year he decided to go into business for himself.
"Catering is what I want to do," he said.
For now, Butcher limits his traveling to the Tri-City area. Next year, he said, there will be time enough to apply for some of the bigger fairs and events.
"I actually prefer more laid-back, casual events like family barbecues, company picnics. But I'll do food any day of the week, any time," he said.
