Apolloni Vineyards, producer of premium Pinot Noir and Italian style wines in the north end of the Willamette Valley announce the May 11 grand opening of a new underground barrel cave.
The cave is located adjacent to the Apolloni Vineyards winery and tasting room in Forest Grove. The underground facility can store up to 400 barrels for aging the winery’s red varietals under naturally moderated, ideal temperature and humidity conditions. The cave relies on 100% passive geothermal regulation to maintain optimal barrel storage temperature and high relative humidity. This allows for barrel aging with minimal intervention, reducing ullage and oxidation. The barrel cave's architecture includes a Tuscan-inspired arched ceiling and stucco finish, and traditional wooden doors with custom iron strapping. The cave reflects those of the Apolloni family’s villa and vineyards in Italy, south of Venice.
During the grand opening, from 4-7pm, guests will enjoy a special tasting featuring an exclusive selection of library wines, with vintages dating back to 2002. Italian appetizers, gourmet cheeses and charcuterie will also be served. The cost is $20 per person. The limited library wines will also be available for purchase, as well as additional case discount pricing on May 11 only.
