When Jenny and Felix Sanchez decided to move their gourmet restaurant, El Fat Cat Grill, into a food truck more than three years ago, they wondered if their patrons would follow.
“We walked into this blindly,” Jenny Sanchez said. “We’re the first ones to come in and do actual gourmet food in a food truck.”
And it worked. El Fat Cat Grill now sits behind the Edison Car Wash in Kennewick, and business couldn’t be better.
“We have such an amazing following,” she said. “We’re always saying thank you to every person who comes. It’s so cool for them to accept who we are.”

Part of it may be because of the family atmosphere they’ve worked hard to create while at the restaurant, which has carried over to the food truck.
“I wanted to keep it personal,” she said. “We kept it so real. We don’t want to be false. Don’t sugarcoat it. We want to hear about it. If something doesn’t taste right, we’ll go back in and try to fix the problem.”
Sometimes she even plays rock, paper, scissors with customers to see if they will pay for their meal.
“Felix told me I had to stop doing that,” she said, laughing.
El Fat Cat serves everything from tacos to hamburgers, or whatever Felix decides to concoct.
“Felix seriously cooks out of love,” she said of her husband. “And if it doesn’t taste right, he won’t serve it. He truly cares about what that person eats.”
One of their most popular items is the pineapple salsa. “It is beyond popular,” she said.
El Fat Grill is at 530 N. Edison St. in Kennewick, next to Traffic Jams auto shop and behind the Edison Car Wash. Hours are 11 a.m. to 7 p.m. Monday through Friday.
