Food for Thought: A reader's uncommon avocado recipe

On May 28, we ran a story on the cover of the Food & Wine section giving less common uses, recipes and ideas for using avocados.

Well, James "Kimo" Ahia of College Place has an extremely uncommon way to enjoy avocados.

In an e-mail he wrote: "In Hawaii, we ate avocados in a unique way. It was mashed with sugar and used as a spread on hardtack 'pilot' crackers in place of preserves or peanut butter. (It is) in other words the 'poor man's butter.' I still love it and splurge every time avocados are on sale. Great taste contrast when spread on saltines or Ritz crackers."

Since avocados are one of my least favorite fruits, I haven't yet found the intestinal fortitude to give it a try. But the sweet-salty combination sounds intriguing.

Anyone willing to give Ahia's spread a try? If so, let me know how you like it.

Ephrata market opening

The Ephrata Farmers Market opens for the season Saturday. Hours are from 8 a.m. to 1 p.m. at Sun Basin Plaza on Basin Street.

Pressure gauge testing

Master Food Preserver volunteers, trained by the Washington State University Extension, will test the gauges on pressure canners for accuracy while you wait from 9 a.m. to noon June 19, July 11, Aug. 15 and Sept. 5 at the Kennewick Cooperative Extension office, 5600-E W. Canal Place.

To have your canner tested, bring the entire lid assembly to the Kennewick Extension office during the scheduled testing clinics. Or drop it off -- be sure to mark it with your name and daytime phone number -- any weekday from 8 a.m. to noon or from 1 to 4 p.m.
