On The Rocks: Summer and rum go hand in hand

With a cold, windy, rainy, snowy springer -- that's a combination of spring and winter, by the way -- finally behind us, the first days of summer are almost here. And that also means flavorful, fresh summer cocktails can't be far behind.

Rum emerges as a winner for making warm weather cocktails, and the best thing is that they can be as versatile as you want them to be.

The Atlantico family of rums, handcrafted in the Dominican Republic, is an excellent choice for subtle, frozen or fruity summer drinks. The range includes the white Platino, made with a blend of rums based in fresh cane juice and molasses and which comes across with notes of vanilla and citrus. The Platino complements mint exceptionally well and is perfect for a refreshing mojito.

The darkly rich Private Cask, aged up to 20 years, tastes of luscious toffee, caramel, raisins, and maple, and is considered one of the finer rums on the market. The Private Cask is well-suited for the serious rum drinker, as it works very well on its own when it's poured over ice.

When it comes to entertaining, a summer bar isn't complete without a white rum such as the Platino, but for those who enjoy dark rum, I would choose a bottle of Atlantico's Reserva, made with several different aged rums.

Atlantico Banana Daiquiri

1 1/2 ounces Atlantico Platino Rum
1 tablespoon triple sec
1 banana
1 1/2 ounces lime juice
1 teaspoon sugar
1 cup crushed ice
Maraschino cherry for garnish

Pour ingredients into a blender. Blend on low speed for a few seconds, then at high speed until smooth. Pour contents into a chilled glass. Garnish with the maraschino cherry.

Love Potion No. 9

1 3/4 ounces Atlantico Reserva Rum
5 maraschino cherries, muddled
5 ounces Frangelico
1 ounce half & half
5 ounces simple syrup

Muddle cherries in a shaker. Add remaining ingredients. Shake well with ice, and then strain into a martini glass. Garnish with a cherry and pinch of powdered chocolate.

Caribbean Sky

1 3/4 ounces Atlantico
Reserva Rum
Muddled pineapple (three chunks)
1 ounce coconut water
1/2 ounce fresh lime juice
1 ounce agave nectar

Add ingredients in Boston shaker. Add ice and shake vigorously. Strain into Rocks glass. Garnish with mint leaf with shaved coconut.

Summer Cranapple Pie

1 3/4 ounce Atlantico
Reserva Rum
1 ounce apple cider
3/4 ounce cranberry juice
1/2 ounce fresh lime juice
3 ounce simple syrup

Add ingredients in Boston shaker. Add ice and shake vigorously. Strain into cocktail glass. Garnish with 3 cranberries and graham cracker glass rim.

Summer Red Ocean

2 ounces Atlantico
Platino Rum
1 3/4 ounces fresh lime juice
3/4 ounce simple syrup
10 fresh mint leaves
5 fresh raspberries

In the bottom of a shaker, muddle mint leaves and raspberries. Add Atlantico Rum and lime with simple syrup. Shake and serve over ice.

Atlantico Mojito

2 ounces Atlantico Platino Rum
12 mint leaves
2 ounces champagne
1 ounce fresh lime juice
1/2 ounce simple syrup

Place mint and simple syrup in shaker and muddle well. Add ice, lime juice and Atlantico Rum. Shake and pour into highball glass. Top with champagne. Garnish with mint or lime.
