Here is owner/winemaker Chris Camarda’s best wine. Using estate grapes from Champoux Vineyards that average 33 years in age, it is a blend heavy on Cabernet Sauvignon, along with Merlot, Cabernet Franc and Petit Verdot.

It offers aromas of dark plums, blueberries, chalkboard dust, cedar, toast and wild roses, followed by flavors of plums, pomegranates, huckleberries and black tea. It’s a complex wine with tannins that build to a crescendo of flavors and a memorable finish.

This delivers the goods now, but it has the potential to age for a decade or more. Rated “Outstanding” by Great Northwest Wine. (14.5 percent alcohol)

Food matches: Prime rib, venison, beef au jus or pasta in a red meat sauce.
