Home Style Chicken Soup

Ingredients

1 store bought rotisserie chicken

1 tablespoon olive oil

2 cups chopped onion

2 large carrots, peeled, halved lengthwise, and thinly sliced

2 large celery ribs, trimmed and thinly sliced

1 teaspoon dried thyme leaves

8 cups low sodium chicken broth

Instructions

Remove the chicken meat from the chicken, discarding bones and skin. Cut or shred the chicken meat into bite-size pieces (approximately 4 cups).

Heat the oil in a large saucepan set over medium-high heat. Add the onion, carrots, and celery. Season with salt and pepper to taste. Cook and stir 8 minutes. Add the chicken, thyme, and broth. Bring to a simmer and cook 5 minutes to blend flavors. Makes 8 servings.
