Makes 3 dozen balls
Start to finish: 1 hour 10 minutes (10 minutes active)
Ingredients
3 1/2 cups quick oats
1 cup sugar
1/2 cup cocoa powder
1 teaspoon vanilla extract
10 tablespoons butter, room temperature
1/2 cup cold coffee
Shredded coconut, for rolling
Instructions
In the bowl of a food processor, pulse together the oats, sugar and cocoa powder just to combine. Add the vanilla and butter and pulse again, just to mix. Add the coffee and pulse just until the mixture has come together. Remove the blade and give the mixture a little stir to ensure everything is evenly distributed. Refrigerate for 1 hour.
Place the coconut in a shallow dish, such as a pie tin. Roll the chocolate-oat mixture into 1 1/4-inch balls, then roll each in the coconut. Refrigerate in an airtight container.
